Banana Zucchini Chocolate Chip Muffins

On May 15 celebrate National Chocolate Chip Day with some of these tasty banana zucchini chocolate chip muffins.

2 cups all purpose flour
½ cup brown sugar
1 tbsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 cup chocolate chips
1 cup grated zucchini, lightly squeezed and drained
2 cups mashed or pureed ripe bananas (about 4 large ones)
4 oz. melted butter
¼ cup milk
2 eggs
1 tsp. vanilla extract


  • Preheat oven to 375 degrees
  • Grease 24 mini cupcake cups or 12 large cups
  • In a large bowl, mix all the dry ingredients together along with the chocolate chips
  • In a mixer, combine the banana, melted butter, zucchini, milk, eggs and vanilla extract
  • Fold in the dry ingredients
  • Scoop out the muffin batter into the cups
  • Bake for 15 to 20 minutes until golden brown. Insert a toothpick in the middle and it should come out clean.
  • Let stand for several minutes and transfer to a wire
